This blog started off as an experiment to see how hard it would be to make the transition from vegetarianism to veganism. I discovered that it wasn't really very hard at all, and I have been eating completely vegan ever since. I use local and farmer's market (FM) produce in my cooking whenever possible. FYI: Two cookbooks I use alot are Vegan With a Vengeance (VWAV) and Veganomicon (Vcon). I will reference these both quite a bit (because they are so good)!

Your dishes always looks so balanced ! Do you have the recipe for the "chicken" parmigiana ?
I wish I could say I made the "chicken" from scratch, but I didn't in this case. (I did however make the sauce!).
All I do is use a pre-made "chicken" patty (thawed), top it with marinara and fake mozzarella cheese. I broil it until the cheese gets toasty and that's it! It's very easy to throw together and very tasty.
