Made these quesidillas with mountain bread instead of a tortilla. The filling consists of Amy's refried beans and Daiya vegan cheese (the new product that many vegan bloggers have been raving about). I'm so glad that my local Whole Foods has started carrying this stuff.

It may catch on in your part of the country soon enough...there is definitely a market for it! I think some places sell it online if you're really interested in trying it.
